I was looking for a chocolate cookie recipe for Christmas and came across the recipe for Chocolate Crinkles on Simply Recipes. As it is Christmas, mint chocolate is always good, so I added some peppermint extract to the cookies and they got rave reviews.
You will need the following: unsweetened cocoa, flour, sugar, powdered sugar (confectioners’ sugar), baking powder, eggs, vegetable oil (I used canola oil), vanilla, peppermint extract (optional), and possibly salt.
Chocolate Crinkles
Recipe type: Cookies
Ingredients
- 1 cup unsweetened cocoa
- 1½ cups sugar
- ½ cup vegetable oil
- 4 eggs
- 2 teaspoons vanilla extract
- ½ teaspoon peppermint extract (optional)
- 2 cups flour
- 2 teaspoons baking powder
- ½ teaspoon of salt (optional)
- powdered sugar (confectioners' sugar)
Instructions
- Beat together cocoa, sugar, and oil until mixed well.
- Add eggs one at a time, mixing for 30s each.
- Add vanilla and peppermint if using and beat very well.
- In a separate bowl, add flour, baking powder, and salt if using, and whisk together.
- Add flour mixture to chocolate mixture and beat on low speed until just combined.
- Cover dough with plastic wrap and refrigerate for at least four hours or overnight.
- Preheat oven to 350°F (177°C). Line cookie sheets with parchment paper. Place powdered sugar in a bowl.
- Using a spoon or a cookie scoop (1 Tablespoon would be ideal), get a scoop of the chilled dough and roll into a ball (using your hands) with a diameter of approximately 1in. Take ball and roll in powdered sugar and place on prepared cookie sheet. You can fit 12 cookies on a standard cookie sheet.
- Bake cookies for 10-12min. Let cookies cool on pan for 1-2min before placing on a wire rack or paper towels to cool completely.
