I was looking for a chocolate cookie recipe for Christmas and came across the recipe for Chocolate Crinkles on Simply Recipes.  As it is Christmas, mint chocolate is always good, so I added some peppermint extract to the cookies and they got rave reviews.

You will need the following:  unsweetened cocoa, flour, sugar, powdered sugar (confectioners’ sugar), baking powder, eggs, vegetable oil (I used canola oil), vanilla, peppermint extract (optional), and possibly salt.

Chocolate Crinkles
Recipe type: Cookies
  • 1 cup unsweetened cocoa
  • 1½ cups sugar
  • ½ cup vegetable oil
  • 4 eggs
  • 2 teaspoons vanilla extract
  • ½ teaspoon peppermint extract (optional)
  • 2 cups flour
  • 2 teaspoons baking powder
  • ½ teaspoon of salt (optional)
  • powdered sugar (confectioners' sugar)
  1. Beat together cocoa, sugar, and oil until mixed well.
  2. Add eggs one at a time, mixing for 30s each.
  3. Add vanilla and peppermint if using and beat very well.
  4. In a separate bowl, add flour, baking powder, and salt if using, and whisk together.
  5. Add flour mixture to chocolate mixture and beat on low speed until just combined.
  6. Cover dough with plastic wrap and refrigerate for at least four hours or overnight.
  7. Preheat oven to 350°F (177°C). Line cookie sheets with parchment paper. Place powdered sugar in a bowl.
  8. Using a spoon or a cookie scoop (1 Tablespoon would be ideal), get a scoop of the chilled dough and roll into a ball (using your hands) with a diameter of approximately 1in. Take ball and roll in powdered sugar and place on prepared cookie sheet. You can fit 12 cookies on a standard cookie sheet.
  9. Bake cookies for 10-12min. Let cookies cool on pan for 1-2min before placing on a wire rack or paper towels to cool completely.
Yield: approximately 4 dozen cookies
